Our Honey

We produce a variety of honey depending on the availability and the season.

Single Hive Honey

This is a longer and more arduous extraction and bottling process than the usual automated spinners and mechanical bottling plants, but we feel that it is worth it!

It takes such a lot of time, risk and effort on the part of the bees and the bee keeper to produce honey that we feel it is important to be able to transfer the resultant honey to you our customers.

We select our single hive honey from sites that are unique – either pure unadulterated bush sites or sites that have a unique appeal to the local community.

When the super compartment of the hive is full of capped honey we remove that super, cut and mash the comb into gauze nets and suspend these over collection containers. We then allow gravity to draw the honey through the gauze filter removing most of the wax, but leaving mixed in the honey all the goodness that the bees intended – pollen, propolis and other nutrients that nature intended to be in honey.

We then hand bottle in glass bottles and hand label each bottle with our unique labels which include a safety seal  strip that tells you exactly where the honey is from.

The hives on commercial farms that are also used for pollination of crops are extracted and blended in the usual way for our bulk and squeeze bottle range.

Creamed Honey

Creamed honey has nothing to do with cream!

Creamed honey is seeded with a small amount of honey that has gone sugary. It is then stirred to mix it all well. The honey then crystallizes with very fine crystals.

This is called the Dyce process and it prevents the honey from hardening in the cold. We usually sell this in winter.

It is difficult to do this with fake honey so if you are ever in doubt as to the purity of honey on the shelf, take the creamed variety!

Creamed honey is also easy to manage – it does not run and drip through holes in your toast and is easy to scoop into drinks or baking.

Comb Honey

Comb honey is the honey comb with the honey inside the cells just as the bees packed it. The thin wax capping can be seen sealing the cell completely.

We cut the comb into strips and bottle it, suspending the comb in our natural honey. Sometimes we sell whole frames of capped comb straight from the hive super!
